Soy Presentation Title: Soyfoods for Good Taste & Good Health!

As a nutrition consultant to the Indiana Soybean Board, Illinois Soybean Association and the United Soybean Board, Kim has spent the past few years educating the public about soyfoods. Kim's very consumer-oriented presentation focuses on the basics of shopping for soyfoods and using them in all your meals and snacks. From where to find them in the supermarket to cooking them for breakfast, lunch and dinner, you'll learn tips for using every different soyfood available today. Presentation includes the very basic overview of health benefits (nothing scientific or research oriented) and also features a short cooking demonstration. Participants can then sample different soyfoods at the end of the presentation. Time required: 1.50 hours Program sponsors will need to assist with soyfood samples, cooking equipment and supplies for program.

Soy Presentation Title: Soy Much More in Foods

Teresa is a Registered Dietitian and has been in practice for 8 years. Four years as a Clinical Dietitian, two years as a Buyer of nutritional supplements, one and half years employed with the Illinois State Board of Education with the Nutrition and Education Services. For eight years she has been a Nutrition Consultant, educating individuals and groups on the most up-to-date and reliable nutrition information. Her presentation " Soy Much More in Foods" provides the benefits of soy protein and cooking demos on various recipes using soy products.

She has worked with the media on various concerns and issues relating to nutrition and health topics. She is currently the State Media Representative for Indiana Dietetic Association. Teresa's goal is "Make nutrition education more fun, and to help individuals attain optimum health; seeing positive results is the most wonderful feeling for me and my clients."

Soy Presentation Title: The Joy of Soy - and Isoflavones

Dana teaches how to effortlessly eat and enjoy 25 grams a day of soy protein. In Soy #101, her soyfoods seminar, she shows chefs and home cooks how to cook with the traditional four soyfoods (tofu, soymilk, miso and tempeh), plus edamame, soy crumbles, textured soy protein, and baking mixes.

Her soy cookbook, The Joy of Soy, was a James Beard Award nominee under the title The Natural Kitchen: SOY! She contributed the soy section to the new Joy of Cooking.

Jacobi has taught at the Culinary Institute of America, and at the Fancy Food Show. When the FDA announced approval of its heart health claim, she presented menus and recipes on behalf of the Soyfoods Ass'n of North America.

Ms. Jacobi focuses on techniques for making remarkable mainstream soy dishes. In addition to presenting recipes ranging from Decadent Chocolate Mousse, Thai Sweet Potato Soup, Smokin' Black Soybean Chili, and Cranberry Nut Muffins to Banana Cream Pie and Meatloaf Florentine, she offers guided tastings of ready-to-eat soyfoods.

Anne Patterson, R.D., registered dietitian, owns and operates Nutrition Advantage, a food and nutrition consulting company based in Farmington, Illinois. She communicates the importance of wholesome food in relation to health and vitality.

Ms Patterson utilizes her experience and knowledge in agriculture, culinary and nutrition to translate the science of nutrition into healthy food choices for consumers. She is the credible communication link between grower, food industry and consumer.
Ms Patterson is a leader in the field of soyfood nutrition. Co-owner of two farms, she has worn many hats in educating and promoting soy the past ten years. Whether her work is coordination of agricultural tours for Japanese businessmen, cooking demonstrations at county fairs, or a guest appearance on American Culinary Review for PBS television, all work receives the same dedication.

A frequent guest lecturer, Ms Patterson has presented to thousands of health care members, chefs, school food service personnel and consumers. Groups include, the American Dietetic Association, American School Food Service Association, American Culinary Federation and International Vegetarian Association. She is a resource for the media, contributing to such print media as Seventeen, Glamour, Natural Health, Walking, McCalls, Environmental Health, Farm Journal, Good Housekeeping, Chicago Sun-Times, Baltimore Sun and Washington Post. She has appeared on a variety of radio and television shows discussing the nutritional attributes of soyfoods.

Ms Patterson has been a member of the editorial board of the United Soybean Board's The Soy Connection newsletter since its inception in 1993. She was a presenter for the Soy Connection Seminars for Dietitians sponsored by the United Soybean Board and state soybean boards. Ms Patterson has answered hundreds of consumer and healthcare inquiries from the 800-TalkSoy line.

Ms Patterson was nutrition educator and consultant for a culinary educator kit for chefs, Soyfoods: Products of Your Imagination and The Soy Difference, a dietitian's education kit. She developed The Soy Solutions Meal Plan for Whole Foods Market web site in order to show shoppers how easy it is to eat a variety of soyfoods.

Ms Patterson received a Bachelor of Science at Bradley University. She graduated from the dietetic internship at OSF Saint Francis Medical Center, Peoria, Illinois. Desiring to better communicate the importance of taste and enjoyment of whole foods, Ms Patterson completed a vegetarian culinary program at The School of Natural Cookery, Boulder, Colorado. She studied at The Cooking & Hospitality Institute of Chicago. Ms Patterson began her career in dietetics as a clinical dietitian.
